Uh-MAY-Zing Snickerdoodles

Tonight my husband worked his first 12:00-9:00pm shift and I figured I would make him his favorite cookies just because. He’s gotten cookies a lot recently because other people were getting cookies, but none made just for him.. mostly friends and work potlucks. We had a tough weekend, so a treat was in order. These cookies turned out super thick and moist (especially for snickerdoodles) We LOVE them.

You will need:

  • Butter flavored cooking spray and pan
  • 1/2 C butter, at room temperature
  • 1 C sugar
  • 1 egg
  • 1 Tsp vanilla extract
  • 1/4 Tsp salt
  • 1/2 Tsp baking powder
  • 1 1/2 Tsp cinnamon
  • 2 tbsp milk
  • 1/4 C sugar
  • 1 Tbsp cinnamon

Preheat oven to 375.

Mix butter and sugar until smooth.

Add egg and vanilla, mixing well until combined.

Stir in flour, baking powder, salt, and 1 1/2 teaspoons cinnamon.

Add in milk.

Refrigerate for dough 20 minutes. Mix your sugar and tablespoon of cinnamon together in a small bowl. Generously spray down your cookie sheet with your butter flavored cooking spray.

Once chilled, roll your dough into balls about the size of ping-pong balls, then roll them around in the sugar/cinnamon mix. Lightly flatten them out on your cookie sheet. Bake for 9-12 minutes. My oven took 10.
